6. Hemingway Daiquiri
White rum, lime, grapefruit, maraschino, no sugar. The way Hemingway drank it. Build: 2 oz white rum, 0.5 oz lime, 0.75 oz grapefruit, 0.25 oz maraschino.
7. Dark 'n' Stormy
Gosling's Black Seal Rum, ginger beer, lime. Trademarked by Gosling — substitute generic 'dark and stormy' if you use other dark rums. Build: 2 oz Gosling's, top with ginger beer in a tall glass, lime wedge.

About rum
Rum splits roughly into Spanish (light, columnar still — Bacardi, Havana Club style), British (heavier, pot still — Jamaica, Demerara), French (rhum agricole, made from sugarcane juice not molasses — Rhum Clément, Rhum J.M.). For cocktails, white rum (Bacardi Superior, Havana Club 3-year) is the workhorse; aged Jamaican (Smith & Cross, Appleton Estate) for tiki; agricole (Rhum Clément V.S.O.P.) for sipping.

- What's the difference between white, gold, and dark rum?
- White is unaged or briefly aged then filtered. Gold is aged 1-3 years in oak. Dark/black is heavily aged or molasses-colored. For Daiquiri and Mojito, use white. For Mai Tai and Painkiller, use aged. For Dark 'n' Stormy, use Gosling's specifically.
- Is overproof rum just for tiki?
- Mostly. Smith & Cross (overproof Jamaican) and Lemon Hart 151 are tiki essentials — they hold up against pineapple and orgeat where lower-proof rums get lost. Don't drink overproof rum straight unless you have a death wish.
- What's rhum agricole and how is it different?
- French Caribbean rum made from fresh sugarcane juice instead of molasses. Grassy, vegetal, more wine-like. Rhum Clément and Rhum J.M. are the gateways. Doesn't substitute well in standard rum cocktails — make a separate category for it.
- Why doesn't my Daiquiri taste good?
- Wrong rum (must be white, dry, Cuban-style — Bacardi Superior or Havana Club 3-year). Or you used Rose's Lime Cordial instead of fresh lime. A real Daiquiri is three ingredients done right; bad versions ruin all three.
