Cocktails

Cocktails with rye whiskey: 8 essential drinks.

Rye whiskey is the spine of pre-prohibition American cocktail culture. Before bourbon dominated the 20th century, rye was what bartenders reached for — spicier, drier, with a peppery edge that holds up against vermouth and bitters. Half the drinks in Hugo Ensslin's 1917 manual lean on rye. Here are 8 rye cocktails worth pouring, with the manuscript page where applicable.

The 8 drinks

1. Old Pal

1917 · Hugo Ensslin

Equal parts rye, dry vermouth, Campari. Stir with ice, strain, lemon twist. The drier cousin of the Boulevardier. From Ensslin's Recipes for Mixed Drinks, the last bartender's manual published before American Prohibition. Build: 1 oz rye, 1 oz dry vermouth, 1 oz Campari.

2. Manhattan

1880s · multiple manuscripts

Probably the most-recreated cocktail in history. Rye, sweet vermouth, Angostura bitters, stirred over ice, served up with a brandied cherry. Build: 2 oz rye, 1 oz sweet vermouth, 2 dashes Angostura bitters.

3. Sazerac

1850s · New Orleans

America's first cocktail by some accounts. Rye (originally cognac), sugar cube, Peychaud's bitters, Herbsaint or absinthe rinse, lemon peel expressed and discarded. Build: 2 oz rye, 1 sugar cube, 3 dashes Peychaud's, absinthe rinse.

4. Whiskey Sour

1862 · Jerry Thomas

Rye, lemon juice, simple syrup, optional egg white. Shaken hard. Originally appeared in Thomas's Bon Vivant's Companion. Build: 2 oz rye, 0.75 oz lemon juice, 0.75 oz simple syrup, 1 egg white optional.

5. Improved Whiskey Cocktail

1862 · Jerry Thomas

Old-fashioned's predecessor. Rye, sugar, Angostura, maraschino liqueur, absinthe rinse, lemon peel. From Thomas's Bon Vivant's Companion. Build: 2 oz rye, 1 tsp sugar, 2 dashes Angostura, barspoon maraschino, absinthe rinse.

6. Vieux Carré

1938 · Hotel Monteleone, New Orleans

Equal parts rye and cognac, sweet vermouth, Bénédictine, Peychaud's and Angostura. Stirred. Build: 0.75 oz rye, 0.75 oz cognac, 0.75 oz sweet vermouth, 0.25 oz Bénédictine, dash Peychaud's, dash Angostura.

7. Brooklyn

1908 · William Boothby

Rye, dry vermouth, Amer Picon (now hard to find — substitute Bigallet China-China or Amaro CioCiaro), maraschino. From Boothby's The World's Drinks. Build: 2 oz rye, 1 oz dry vermouth, 0.25 oz Amer Picon, barspoon maraschino.

8. Boulevardier

1927 · Erskine Gwynne

Equal parts rye, sweet vermouth, Campari. Negroni's whiskey cousin. Build: 1.5 oz rye, 1 oz sweet vermouth, 1 oz Campari.

About rye whiskey

Rye whiskey must be at least 51% rye by U.S. law. Look for Rittenhouse Bottled-in-Bond ($25, 100 proof, ideal cocktail rye), Wild Turkey 101 Rye, Old Overholt, or Pikesville for premium. Avoid sweetened or 'Canadian rye' for these recipes — neither has the spice profile that makes pre-prohibition cocktails work.

FAQ

Can I substitute bourbon for rye?
In Manhattan, Whiskey Sour, and Boulevardier, yes — bourbon makes them sweeter and softer, slightly different drink but recognizably the same cocktail. In Sazerac and Old Pal, the rye spice is structural — bourbon doesn't work.
What's the best rye for cocktails?
Rittenhouse Bottled-in-Bond. 100 proof gives you something to push back against the vermouth and bitters. Around $25-30 in most markets. If you can find Pikesville, that's the next step up.
What's Peychaud's bitters and where do I find it?
Anise-forward New Orleans bitters from the 1830s, essential for a real Sazerac. Sold in cocktail shops, Total Wine, BevMo, and online. Don't substitute Angostura — it's a completely different flavor.
Is rye whiskey gluten-free?
Distilled rye is technically gluten-free under FDA standards (distillation removes gluten proteins). People with celiac sensitivity may still react. If you're unsure, use a corn-based bourbon or a certified gluten-free spirit.
